Ingredients
- 2 tbsp extra virgin olive oil
- 1 whole chicken (3½–4 lb)
- Salt
- Black pepper
- 2 medium onions or 4 shallots, finely chopped
- 4 cloves garlic, thinly sliced
- 2-3 tbsp fresh rosemary, finely chopped
- ¼ tsp crushed red pepper flakes
- 1 can cannellini beans, drained and rinsed
- 1 can chickpeas, drained and rinsed
- 3–3½ cups chicken broth
- 1 whole rosemary sprig
- ½ cup freshly grated Parmesan
- Zest of 1 lemon
